Celebrating Father's Day
>> Tuesday, June 21, 2011
Here are some pictures from our Father's Day celebrations.
My Dad couldn't be at church on Sunday because he had to work (fire season is crazy), but we
celebrated with him and our family on Tuesday getting him an ice cream maker at Tractor Supply
and eating at my Granddad's favorite Mexican restaurant.

I was checking to see what my earplug looked like...

I didn't feel like I was putting it in right... haha

We eventually got it :D

It was a really hot day.
It got up to 93 degrees and the heat index had to have been above 100.

The carrot cake I made for Dad!

Cream cheese frosting :D

Carrot cake is Dad's favorite
I'm not really a fan of it, but I enjoyed this one!
Best Ever Carrot Cake
2 cups sugar (I used 1 cup sugar, 1 cup sucanat)
1 cup vegetable oil
Cream these together well. Add
4 eggs, one at a time, mixing well after each addition.
Add:
2 cups grated carrots
Combine:
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. cinnamon (I don't like cinnamon too much so I just sprinkled enough to taste it)
1/2 cup of ground walnuts
Add to the egg mixture and mix well.
Preheat oven to 350°F.
Grease and flour a 10-inch tube pan or a 13x9-inch baking pan (I used 13x9-inch).
Pour batter into pan and bake for 1 hour or until a toothpick inserted into center of cake comes out clean.
(I used convect at 325°F for 50 minutes and it was done)
Thanks to cooks.com for this recipe!
I adapted my cream cheese icing from this recipe.

I hope you all enjoyed Father's Day with your Dads!
